Rice buns:
2 cups of steamed rice
1 tablespoon of corn starch
1 teaspoon of sesame oil
1 teaspoon of soy sauce

Meat:
4 ounces of minced pork
4 tablespoons of minced onion
1 egg white
1 teaspoon of soy sauce
1 teaspoon of saki rice wine
1 teaspoon of mirin wine
A dash of sesame oil
A pinch of salt
A pinch of sugar
A pinch of pepper

Sauce:
2 tablespoons of soy sauce
2 tablespoons of saki rice wine
2 tablespoons of mirin wine
1 tablespoon of sugar

To make the rice bun, in a big bowl add 2 cups of steamed rice and 1 tablespoon of corn starch (the corn starch is going to make the rice firmer). Then place the rice into a rice mold (you could also make it with bare hand, but make sure that you wet your hands first so the rice won’t stick onto your hands).

To make the meat patties: in a big bowl, add 4 ounces of minced pork, 4 tablespoons of minced onion, 1 egg white, 1 teaspoon of soy sauce, 1 teaspoon of saki rice wine, 1 teaspoon of mirin wine, a dash of sesame oil, a pinch of salt, a pinch of sugar, a pinch of pepper. Mix well. Then make them into 4 patties.

To make the sauce: in a small bowl, mix 2 tablespoons of soy sauce, 2 tablespoons of saki rice wine, 2 tablespoons of mirin wine, 1 tablespoon of sugar.

In a pan, add 1 teaspoon of sesame oil, brush a dash of soy sauce on to the bun, and place the soy sauce side on the bottom. Cook for 2 minutes. Brush soy sauce on the other side too. Flip them and cook for another 2 minutes until there’s a light crust. Take them out and put aside.

In the same pan, add 2 tablespoons of oil. Add the meat patties in to the pan and cook in medium heat for 2 minutes. Flip to another side and cook for 2 more minutes. Flip the side again and pour the sauce into the pan and cook for 2 minutes and over the lid. Flip them 1 more time and cook for 2 more minutes with the lid closed.
