- Dice mozzarella cheese sticks into 1/2 inch pieces. Chop basil leaves.
- Add marinara sauce, melted butter, eggs, parmesan cheese, basil, salt and pepper into cooked rice and mix throughly.
- Use an ice cream scoop or spoon to shape the rice mixture into a ball. Poke a hole in the middle and put a piece of mozzarella inside. Close the hole with more rice.
- Coat the rice balls in panko bread crumbs.
- Bake at 425°F /220° C for 15 mins or until golden.
