Italian Style Cheesy Rice Balls

Italian Style Cheesy Rice Balls Ingredients:

(for making 8 pieces)

Cooked rice, 1 cup

Marinara sauce, 4 tbsp

Butter, 3 tbsp

Parmesan cheese, 2 tbsp

Eggs, 2

Fresh basil

Black pepper, 2 tbsp

Salt, 1/2 tsp

Mozzarella cheese, 1 cup

Panko bread crumbs

 

Italian Style Cheesy Rice Balls Instructions:

  1. Dice mozzarella cheese sticks into 1/2 inch pieces. Chop basil leaves.
  2. Add marinara sauce, melted butter, eggs, parmesan cheese, basil, salt and pepper into cooked rice and mix throughly.
  3. Use an ice cream scoop or spoon to shape the rice mixture into a ball. Poke a hole in the middle and put a piece of mozzarella inside. Close the hole with more rice.
  4. Coat the rice balls in panko bread crumbs.
  5. Bake at 425°F  /220° C  for 15 mins or until golden.
