Chinese savory crepes, Jiangbing, takes NYC by storm

Here’s a delicious breakfast food you probably haven’t heard of: Jianbing, or savory Chinese crepes.

It’s actually a popular Chinese street food.

A thin crepe topped with egg, scallion, cilantro, and various sauces. Meat is optional.

Just a few years ago, Jianbing was little known in New York City. Now, Jianbing stalls are popping up left and right.

Meet Brian Goldberg, founder of Mr Bing. He tasted traditional Beijing-style Jianbing while living in China and learned how to make it from local chefs.

“It’s important that we explain to our customers what’s inside the Jianbing. What’s inside our ingredients. People are curious to know what is this mung bean, green bean flour, this lüdoufen (Chinese for mung bean flour). They’re very happy to hear that there’s actually a lot of protein inside green bean flour, lüdoufen. It’s very healthy for you,” said Goldberg.

Next meet Reuben Shorser, consultant turned chef. He makes Jianbing in the Shandong style: The batter isn’t made with mung bean flour and the sauce is a bit sweeter.

You can find him at the Jianbing Company stall in Brooklyn.

“The ultimate plan is to slowly add locations and introduce more people living in the U.S. to Shandong Style Jianbing,” said Shorser, who co-founded the company with Tadesh Inagaki.
