A couple days ago, I was craving for teriyaki chicken, so I wanted to go out and buy it. Then I had another thought, which is that I can also easily make it myself. It will also be a lot healthier and more delicious.

2 chicken thigh, with skin
A pinch of salt
A pinch of pepper
2 cups of rice
3 tablespoons of soy sauce
3 tablespoons of mirin wine
3 tablespoons of sake
1 tablespoon of honey
1/4 teaspoon of grounded ginger
2 tablespoons of oil

First debone the thighs and cut out these extra parts. Use a paper towel to scrub against the skin and take out any hair. Slice the chicken but without cutting them all the way through (by doing this, the chicken will cook faster).

Rub a pinch of salt and a pinch of pepper on the chicken thighs and marinate for 30 minutes.

To make the sauce, in a bowl, add 3 tablespoons of soy sauce, 3 tablespoons of mirin wine, 1 tablespoon of honey, 1/4 teaspoon of grounded ginger.

In a hot pan, add 2 tablespoons of oil, introduce the thighs into the pan, with skin down, and cook for 3 minutes in medium high heat. Then flip to another side and cook in medium high heat for 3 more minutes. Take out the excess of oil. Introduce the sauce into the pan. Flip the chicken again, cook for 3 minutes. Then flip the chicken one more time and cook for another 3 minutes.

Take out the chicken thighs and cut into pieces. Put the chicken pieces on a rice bowl. Pour the sauce over the chicken. Serve!
