Ingredients:

250 g (one piece) boneless skinless chicken breast,
2 bananas, peeled and cut into half
7 oz (one pack) Bread crumbs
6 eggs, beaten
8 oz corn starch
Salad dressing ingredient: 1 cup olive oil, ½ cup apple cider vinegar, 2 tbsp honey, black pepper to taste, 1 lemon(squeeze juice), ½ tsp salt
Salad: Spring Mix, ½ medium size red onion sliced ,10 cherry tomato, 3 small red radish sliced and pickle
Directions:
- Cut chicken breast into 4 thin cutlets
- Sprinkle salt and pepper over chicken
- Wrap banana with chicken, roll along long side , starting from narrower side, secure with two toothpicks at end.
- Coat the chicken roll with starch, then egg, then bread crumbs
- Fry at 320 F until golden, turn occasionally
- Cut each roll into 4 pieces
- Mix all salad dressing ingredients
- In a large bowl, combine spring mix, red onion, cherry tomato, red radish, pickle, chicken and dressing, and mix well
