Oatmeal Cookie Dough Cherry Mini-Pies Ingredients
Dough:
1 cup organic rolled oatmeal
1 cup flour
3/4 cup organic butter
1 cup organic whole milk greek yogurt (any flavor)
1 egg
1 tsp baking soda with apple cider vinegar
1 cup organic chopped almonds (walnuts will work too)
4 tbsp raw sugar
Oatmeal Cookie Dough Cherry Mini-Pies Filling:
1 lb organic frozen cherries (thawed at room temperature for 1 hour)
2 tbsp non-gmo cornstarch with ½ cup water
Mix well, bring to boil, simmer for about 7-8 min, cool
5 tbsp raw sugar
Oatmeal Cookie Dough Cherry Mini-Pies Directions:
1. Mix 2 tbsp cornstarch with ½ cup water and add to the cherries. Bring to boil, add sugar and simmer for about 7-8 min. Set aside.
2. Now let’s make a dough! In a bowl mix oatmeal, flour, butter, yogurt, egg. Add vinegar to a baking soda and add the bubbly mix to the dough. Add almonds and sugar.3. Press dough into greased muffin tin.4. Fill with cherry filling and bake at 325 for about 20-25 min. Check if cooked thoroughly.5. Enjoy!
