Fortresses are good places to keep treasures. One example of that is a French castle, hosting 140,000 Comté cheeses that slowly age before they’re ready to eat.

Refining Comté Cheese is also a chemical adventure.

Different temperatures, constant moisture levels, and strict hygiene is required for the perfect cheese. The stone walls and arches play a role in circulating air, as does the river that runs underneath.
