Simple Lime Pie

Lime Pie Ingredients:

Lime Pie Crust

9 graham crackers

3 tsp sugar

5 tbsp melted butter

 

Lime Pie Filling

3 large egg yolks

3 limes (or 2/3 cup of lime juice)

1 can (14 oz) of condensed milk

1 tbsp lime zest

 

Lime Pie Whipped Cream

1.5 cup heavy cream

3 tsp sugar

Lime Pie Instructions (Crust):

  1. Crush graham crackers into fine pieces, not quite powder
  2. Melt butter and mix with graham crackers and sugar in medium bowl, stir until combined.
  3. Press mixture into pie pan firmly to form crust and bake at 350F for half hour or until stiff, but not overdone
  4. Remove from oven and let cool until room temperature
  5. Refrigerate overnight, or until filling is made (see steps below)

Lime Pie Instructions (Filling):

  1. zest limes into a small bowl
  2. separate egg yolks into medium sized bowl
  3. combine 3/4 of lime zest with yolk, beat
  4. add condensed milk to yolk/zest mixture
  5. juice limes, add lime juice to mixture
  6. let it sit for 30 minutes
  7. preheat oven to 350F
  8. pour mixture into prebaked pie crust
  9. put in oven for 8-10 minutes
  10. cool off, refrigerate overnight
  11. serve with whipped cream, sprinkle lime zest

 

To Serve:

  1. combine and beat with electric mixer until peaks form
  2. store in fridge
