Lime Pie Ingredients:
Lime Pie Crust
9 graham crackers
3 tsp sugar
5 tbsp melted butter
Lime Pie Filling
3 large egg yolks
3 limes (or 2/3 cup of lime juice)
1 can (14 oz) of condensed milk
1 tbsp lime zest
Lime Pie Whipped Cream
1.5 cup heavy cream
3 tsp sugar
Lime Pie Instructions (Crust):
- Crush graham crackers into fine pieces, not quite powder
- Melt butter and mix with graham crackers and sugar in medium bowl, stir until combined.
- Press mixture into pie pan firmly to form crust and bake at 350F for half hour or until stiff, but not overdone
- Remove from oven and let cool until room temperature
- Refrigerate overnight, or until filling is made (see steps below)
Lime Pie Instructions (Filling):
- zest limes into a small bowl
- separate egg yolks into medium sized bowl
- combine 3/4 of lime zest with yolk, beat
- add condensed milk to yolk/zest mixture
- juice limes, add lime juice to mixture
- let it sit for 30 minutes
- preheat oven to 350F
- pour mixture into prebaked pie crust
- put in oven for 8-10 minutes
- cool off, refrigerate overnight
- serve with whipped cream, sprinkle lime zest
To Serve:
- combine and beat with electric mixer until peaks form
- store in fridge
