Pea Shoots with Garlic in Superior Stock

Pea Shoots with Garlic in Superior Stock Ingredients:

 

  • Pea shoots
  • Garlic cloves
  • Ham
  • Ginger
  • Cooking wine
  • Superior stock (a very rich broth prepared using ingredients such as chicken, pork and ham)
  • Basic chicken stock

 

Pea Shoots with Garlic in Superior Stock Directions:

 

  1. Cut ham and ginger into slices.
  2. Parboil the ham.
  3. Cut off the tip of garlic cloves. Peel off the papery parchment outside the garlic cloves.
  4. Parboil the garlic cloves. Drain the cloves in a mesh strainer, and set aside.
  5. Heat up plenty of cooking oil in the wok. Add garlic cloves and deep fry until brown. Drain the cloves in a mesh strainer.
  6. In a hot wok, stir fry ham slices and ginger slices until fragrant. Add a little cooking wine. Add some basic chicken stock. Cook briefly. Remove the ham and ginger slices and let them drain in a strainer.
  7. Parboil fresh pea shoots in the wok. Remove and set aside.
  8. In the empty wok, add plenty of basic chicken stock. Add the pea shoots into the chicken stock and cook briefly. Remove and drain the pea shoots slightly. Set aside for later.
  9. In the empty wok, add plenty of superior stock. Add ham slices and cook for a while.
  10. Place the pea shoots into the serving plate.
  11. Place the fried garlic cloves and ham in a spider strainer, pour superior stock over the ingredients repeatedly, so that they absorb more flavor from the superior stock.
  12. In the same serving plate, place the garlic and ham over the pea shoots.

Finally, pour a moderate amount of superior stock over the dish. This refreshing and richly-flavored dish is ready to serve!
