Shrimp Wonton Soup

Shrimp Wonton Soup Ingredients:

  • wonton skins 10

Shrimp Wonton Soup Filling:

  • fresh shrimps 1/2 lb
  • salt 1 tsp
  • white pepper 1/2 tsp
  • light soy sauce 1/2 tsp
  • cornstarch 1 tbsp
  • sesame oil 1 tbsp
  • bamboo shoots 1 tbsp
  • carrots 1 tbsp
  • cilantro 1 tbsp
  • shiitake mushroom 1 tbsp

 

Shrimp Wonton Soup Base:

  • scallion 4 stalks
  • dried shrimps 12
  • ginger 2 slices
  • chicken stock 2 cups
  • bok choy 2
  • kelp

 

Shrimp Wonton Soup Preparation:

Dice bamboo shots, carrots, shiitake mushroom

Chop cilantro into fine pieces

Slice ginger

 

Making the wonton:

  1. Smash the fresh shrimp and season with salt, pepper, and soy sauce
  2. Thicken with starch
  3. Add sesame oil
  4. Mix with diced bamboo shoots, carrots, shiitake mushroom, and cilantro
  5. Wrap a small amount of filling inside the wonton skin. Dip your finger in water and wet the edges. Stick the ends together.

 

Making the soup base:

  1. Stir fry dried shrimps with scallion and ginger slices
  2. Pour in chicken stock
  3. Add bok choy and simmer on low
  4. Skim the dried shrimps, scallion, and ginger from the soup base
  5. Boil the wontons
  6. Serve hot with a few pieces of kelp in the bowl
