Sugar Glazed Sweet Potatoes consists of only two ingredients, sweet potatoes and white sugar. It is a famous traditional dish from the Han region. As simple as it appears, it really tests how well a chef can master the control of heat in a pan.

Sugar glazed dishes are meant to be served immediately. When the dish is hot, taking a piece from the plate will drag out strings of “candied floss” that will harden with cold air, making it a not only tasty but also a fun dish to eat.
