The Ultimate Pineapple Fried Rice Recipe, CiCi Li

The other day, Chef Luo and I went to a supermarket and we saw a pineapple. He said, oh! You could probably make pineapple fried rice with this. And that’s the beginning of my inspiration.

1/2 pineapple
3 tablespoons of oil
1/4 cup of mixed vegetable
2 cups of rice
A pinch of salt
A pinch of pepper
1/4 cup of chopped ham
1/4 cup of chopped pineapple

Here’s how to pick a pineapple: It should smell sweet. It should be firm. It should also has a golden color from bottom up. When you plug up a leave on the top, it should come right out. That means it’s ripe.

Use a big knife to cut the pineapple in half. Use a small knife to cut along the fruit to remove the pineapple. Make sure you don’t pierce all the way through. Then slice it into pieces. Take a big spoon to remove the fruit.

In a pan, add 3 tablespoons of oil. Then add 1/4 cup of mixed vegetable and cook for about 1 minute. Add 2 cups of rice and mix well with the vegetable, add a pinch of salt and pepper. And combine. Now add 1/4 cup of chopped ham and 1/4 cup of chopped pineapple and stir fry for about 1 minute.

Preheat oven to 350 degrees. Transfer the fried rice into the pineapple bowl. Cover the whole pineapple bowl with foil paper. Put the whole thing in the oven and cook for 15 minutes. (By doing so, the pineapple is going to release its yummy flavors into the fried rice.)
