Fishing season opened for a highly regulated and sought after southern French delicacy. Fish larvae have fishermen scrambling to France’s Cote d’Azur to maximize the three-month fishing period. Many EU regulations are in place to control sardine larvae fishing, including only allowing a limited stretch of coastline to be fished, a three-month time period, a limit on the daily allowable catch, and the authorizing of only 11 boats. There are also monitors along the coast to make sure that all the EU regulations are complied with.
The limitations makes the supply scarce and the market price particularly high.
