Mayonnaise Flavored Ice Cream Anyone?

Scottish ice cream maker, Kyle Gentleman, wanted to experiment with a new flavor so he took inspiration from one of the nation's favorite condiments.

"In Scotland chips go with everything. From breakfast, dinner, it doesn't matter. And so do the condiments also as in mayonnaise and ketchup. So, we though why not go with that something that Scottish people love..so we went with mayonnaise", he says.

The home of this frozen mayo dessert is the 'Ice Artisan Ice Cream' shop, which opened in 2016 in Falkirk, a small town situated between the cities of Glasgow and Edinburgh.

Long before the mayonnaise is added to the cream, a mixture is first prepared and pasteurised.

This takes up to an hour.

After that mayonnaise is measured, added and blended together with the cream and sugar.

"We've balanced this recipe so it works well with the amount of fat in the mayonnaise, and now we are going to put it in the batch freezer, which will churn it up and freeze it down," explains Gentleman.

Ice cream fanatics have travelled from as far as Chicago and Germany to try out the ice cream.

"So, the response has been kind of crazy, and even though it was a bit of a Scottish idea, and a kind of a crazy Scottish idea to put mayonnaise in ice cream, it is actually the rest of the world that have enjoyed it more so than Scots," Gentleman says.

Mixed Reactions

The ice cream maestro says reactions have been mixed.

While many Scottish people do not even want to try mayo ice cream he has had a positive response from many tourists who like how creamy it is.

Jemma Fotheringham from Scotland has been to Ice Artisan Ice Cream before, and has just tried mayonnaise ice cream for the first time.

"Oh, it's rotten...sorry. No! It does just taste like mayo. So, cold ice cream mayo isn't for me," she says.

Victoria Gibbons and her family travelled to Scotland from Chicago and made a detour to Falkirk especially to try the condiment ice cream.

"It was wonderful. I was a little apprehensive at first, but you know we came 4000 miles to get here so when I tried it, it was actually really good, really creamy. It still tasted like ice cream. It wasn't like the spread you put on a sandwich, but it was really good. I am glad we tried it," she says.

Scottish customer Kirsty Nimmo says while she wouldn't eat it again, she recommends people try it at least once.

"It was quite strange, but sweet, tasted like the topping you put in cupcakes, like a kind of frosting," says Nimmo.

Gentleman's love for ice cream started when he was a young boy of 13 when he worked in his family's mobile ice cream business.

He pursued his passion and trained in Edinburgh and Italy, finally opening his own store.

"All ice creams are made on site and I pride myself in that and also the idea in artisan ice cream was to make unique artistic flavors that you don't usually see rather than just the usual ones. I think I have kind of achieved that and I want to take that forward," says Gentleman.

Some of Ice Artisan Ice Cream's other interesting flavors include a pink berry cider flavor and bright green energy drink flavored ice cream.

Gentleman says he has many requests to expand on the mayo ice cream with other savoury flavors.

"Everyone's asking that we should do a full range. We should do brown sauce, we should do ketchup, we should do a Frank's hot sauce. So, there's lots of ideas out there that we could do," he says.

The ice cream maker says he is always open to new ideas and wants to keep experimenting with unusual ice cream flavors, so who knows what will be next.
