Glutamate is the brain’s main excitatory neurotransmitter; it critically affects mood, memory, and cognition. However, it has to be carefully regulated, Dr. Russell Blaylock told host of EpochTV’s “Vital Signs” Brendon Fallon—because, in excess, glutamate is highly neurotoxic.

Blaylock is a board-certified neurosurgeon and nutritional researcher.

“I think that this obesity epidemic we’re seeing is because of glutamate in the food of these children when they’re small and they’re eating junk food,” he said.

“We found that if you fed the rats [glutamate] when they were young, they become grossly obese, and we found out [it was] destroying parts of the brain that controlled your obesity, your fat consumption and fat deposition,” he added.

The protein gluten found in wheat, rye, and barley contains glutamate, contributing to the glutamate content of bread.

Which forms of bread and meat are safer for the brain? Which types pose a toxicity risk?

“A lot of meats have injected-hydrolyzed protein. Well, that’s just a form of glutamate,” said Blaylock.

“And when you consume glutamate in processed food, the glutamate goes sky high, and, outside of the cell, it’s enormously toxic,” he adds.

How do we shield our brains from food, air, and injected substances’ toxicity? What steps are taken to protect unborn children and infants’ brain health?

“So if you stimulate the immune system while the pregnancy is in this last trimester, you have a high incidence of these outcomes, either schizophrenia or autism,” Blaylock said.

For Vital Signs “Anti-Inflame PART 2,” Blaylock connects glutamate neurotoxicity risk to the rising rates of ADHD, autism, and related conditions.
